Mmmm, sounds good to me! Strawberry Pizza is a perfect dessert for any hot summer day. It is especially scrumptious when washed down with a cool glass of Murphy's Homemade Lemonade.
A delicate shortbread crust topped with Cool Whip and fresh Strawberries and other various fruits.
Ok, enough with commercial gooberness. But that little ad does describe make my mouth water...lol. Strawberry Pizza is basically a shortbread crust in a 9x13 pan or on a pizza pan. Fresh strawberries and blueberries are on the top as well as cool whip or a mixture of cream cheese stuff but we dont usally do the cream cheese stuff cause its so rich.
I'm making it right now....well sort of. I just stuck the crust in the oven. When it comes out and cools I will add the topping. Here is the recipe! You really should try it, it is amazing!
Strawberry Pizza
The bottom layer is a basic shortbread recipe large enough froa 9 x 13 pan.
2 1/4 cups flour
2 tablespoons sugar
3/4 cup butter
Now the above was the recipe, but our family changes it to the following: (both are really good though)
1 1/3 cup flour
1 1/2 sticks of butter (12 tablespoons)
1 cup nuts
(my mom doesn't add this, but I always like to add 2 tablespoon of sugar here!)
Preheat the oven to 300
Combine ingrediants and press into an ungreased 9x13 pan and cook for 20-25 minutes until set. It won't brown so watch it closely.
The Filling:
1 package of cream cheese 8 ounces
1 cup of powder sugar
1 tsp of vanilla
1/1 tsp of salt
2 cups of whipped topping
I really like the cream cheese stuff but since my mom isn't big into rich stuff we just do cool whip. Cool whip is really good 2!
Combine the first 4 until smooth then fold in whipped topping. Once crust is cool, spread mixture over top and refrigerate.
The Topping:
ok, I'm not even going to put the recipes idea of the topping because they use frozen fruit. Yuch! So just add a bunch of fresh strawberries and blueberries and spread them evenly o the cool whip (or cream cheese stuff). And Enjoy!
Memorial Day....what did you guys do for Memorial Day?
I went to some good friends of our house for a picnic. It was really fun!
We had a nice dinner and yummy dessert and played capture the flag. Our team would of probably won, but we had to leave. :)

This was when I was 2 years old in May. May 7th 1997 to be exact. I'm the smaller one and the other is Mariah. We were at our favorite park in Jamestown. Still love that park, its awesome!
